These are guidelines based on USDA food-safety advice for an unstuffed turkey roasted at 325°F (163°C). Always check that the thickest part of the breast, thigh and wing reach 165°F (74°C) with a food thermometer.
| Turkey weight | Fridge thaw | Cold-water thaw | Roast at 325°F (unstuffed) |
|---|---|---|---|
| 8–12 lb | 2–3 days | 4–6 hours | about 2¾–3 hours |
| 12–14 lb | 3–3½ days | 6–7 hours | about 3–3¾ hours |
| 14–18 lb | 3½–4½ days | 7–9 hours | about 3¾–4¼ hours |
| 18–20 lb | 4½–5 days | 9–10 hours | about 4¼–4½ hours |
| 20–24 lb | 5–6 days | 10–12 hours | about 4½–5 hours |
Rule of thumb: fridge thawing takes about 24 hours for every 4–5 lb; cold-water thawing about 30 minutes per lb with the water changed every 30 minutes. A thawed turkey can stay in the fridge 1–2 extra days. Plan about 1 to 1.5 lb of turkey per guest.
